Trade Waiter Duties
- Setting and arranging tables to fine dining standards
- Handling reservations, greeting guests, presenting menus & beverage lists
- Recommending menu items and wine pairings
- Taking orders and coordinating with kitchen and bar teams
- Serving food & beverages professionally
- Clearing tables and maintaining dining room flow
- Managing glassware, cutlery, and table reset operations
Sommelier Duties
- Recommending and pairing wines with dishes
- Opening, decanting, presenting, and pouring wine with proper etiquette
- Creating and maintaining the restaurant’s wine list with the Head Chef
- Ensuring correct wine temperature, storage, and glassware selection
- Managing wine procurement, inventory, and cellar operations
- Training servers and bartenders on wine knowledge and service techniques
- Organising wine events, tastings, and promotions (including Wine of the Month)
About You – Skills & Attributes
- Certificate III in Hospitality or 18–24 months relevant experience
- Strong wine knowledge and passion for hospitality
- Calm, confident, and quick-thinking in a fast-paced environment
- Excellent customer engagement skills — especially with local clientele
- Positive, energetic personality and a team-focused mindset
- Strong cash-handling accuracy and responsibility
- Committed to WHS compliance & safe work practices
- Results-driven, striving for continuous improvement
- Ability to lead service flows and handle high guest volumes gracefully
- Positive workplace values — supporting an inclusive, respectful environment
